El Sabor del Gorge: Guacamole from Ixtapa

Hood River, Ore., March 1, 2024 – Guacamole is one of those foods that you have to enjoy right away. I don't think I have to explain what Guacamole is to our readers since it is one of those foods that have become an international dish.

One of the places I recommend to eat guacamole as god commands is at the Ixtapa de Hood River restaurant where they prepare the guacamole at your table and you can see the process of making this delicacy for yourself.

The smell of cilantro, seeing the color of the tomato as it is being cut and chopped by hand is an art that is enjoyed visually and prepares you to enjoy the guacamole. There are many foods that I like at Ixtapa Restaurant such as the carne asada tacos, the chicken in mole and the fajitas but I think I really enjoy the fresh guacamole because when they make it at my table I become a part of the process in some way.

When an avocado is of the best quality it can be eaten in a tortilla with a little salt and lemon, if the tortilla is handmade then the taco takes a sublime turn.

As I have already said in other articles, I am from Michoacan and the avocados from my beloved state are the best in the world.

Tancítaro, Michoacán, Mexico is recognized as the avocado capital worldwide and those of us who are from that state presume that we know avocados inside and out. Making guacamole may seem simple but it is not that simple, one of the reasons why I like the Guacamole they make at Ixtapa Restaurant is because they allow the guacamole to have texture, large pieces of all the ingredients and this gives it a rustic touch and taste that reminds me of what my mother and grandmother used to make.

It is important to say that to make a Guacamole like they do in Michoacán you need avocados that are from my state and if possible organic, I sometimes find avocados in the Tree Bird Market store in Hood River a little expensive but it is worth living the experience of eating a high quality avocado. One of the pleasures in life is eating and eating well is also an art.
